By now you guys all know that I’m a big Patriots fan. And why wouldn’t I be? They’re only the greatest team ever. Say what you want about Brady and Belichick; this team is crazy talented and it’s always exciting to watch them play. Sure, we’ve had our ups and downs over the years (#deflategate), but for all the hating and criticism, we still do alright. So on Monday (Australian time zones puts the game right in the middle of the work day, much to my despair) I’ll be enthusiastically cheering for ONE MORE.
Since no Super Bowl is complete without some epic snacks, I’ll also be eating. Last year I made some nifty little Super Bowl Sliders, and also some Spicy Baked Wedges with Lime Mayo. This year, it’s sausage rolls.
To be honest, I don’t even know if Americans eat these. I think they’re more of a British-Australian thing. Regardless of their origins, they are delicious. You can fill a sausage roll with all sorts of things, but for this recipe I’ve used pork, fennel, carrot, and a herb and spice mix that includes saffron and parsley, among other things. Saffron is quite a light flavour that is easily overwhelmed, but it really shines through here, and gives the dish an extra little kick that sets it apart from the standard sausage roll.
Traditionally, a sausage roll is made with a rich, buttery, flaky pastry, but sadly that’s something I have not yet succeeded at replicating with gluten free flour. Instead, I’ve opted for a buckwheat shortcrust pastry, which is sort of reminiscent of a pastie. Still good.
Buckwheat isn’t to everyone’s taste, so if you’ve not appreciated it in the past, you’re probably not going to love it here either. And I can understand that. Let’s be honest, it does kind of taste a bit like…dirt. But, like, a good dirt… You know what I mean, right?
Well, anyway, if you also enjoy the occasional dirt undertone in your meals, go ahead and add the buckwheat flour to the pastry recipe. If you’d rather pass (#footballpuns), just sub it for more gluten free all-purpose plain flour.
SO. To summarise: the Pats are going to win on Monday. Or, if they don’t, I’m going to eat sausage rolls until I can no longer move (jks I’m gonna do that anyway). Either way, it’s going to be a good weekend.
